TASTE
T – (Total Impression of wine on the palate)
E – (Evaluation for the Wine Masters seal of approval)
To judge whether a wine is true to its varietal in terms of flavor profile
The olfactory data, all the flavors you smell in your mouth. These aromatic substances in wine are derived from the grapes, the winemaking, and from ageing
Structure - the wines’ alcohol, sweetness, acid and tannin make up its basic tastes. Balance - The interrelationship of a wines alcohol, residual sugar, acid and tannin. When no one component stands obtrusively in your mouth a wine is said to be well balanced. Wines can also have balance between their aromas, flavors and structures.
T – (Total impression of wine on the palate.)
Attack - the first impression of the wine, which may involve sweetness, dryness, richness or thinness of texture, or even fruitiness (although most of the wine's flavors register a few moments later).
Evolution - the development of the wine in your mouth. You can think of this stage in two parts: - the mid-palate impression - When you tend to notice the wine acidity, get a first impression of its tannin and notice its flavors and their intensity - the rear palate impression - involves the degree of persistence that the wines flavors have across the length of your mouth.
The amount and nature of the wine's tannins, and any indication of a burning sensation from overly high alcohol.
Finish or aftertaste- flavors or impressions that register after the wine has been spat or swallowed. Both the duration of the aftertaste and its nature or noteworthy. A long finish is commendable for example, and a bitter one is not. A suggestion of concentrated fruit character on the finish often indicates that the wine is age- worthy.
E – (Evaluation for the Wine Masters seal of approval)
